Vegan Chocolate Chip Cookies





Hi!

As you all know, I've enjoyed baking for these past few years because I've been finding amazing recipes and also because I've been changing my diet. 


Every time that I decide that I want to bake something, I always try to find an easy vegan/vegetarian option. I've been slowly entering that path and I can say that it's going great and I've also persuaded my mother into this lifestyle.

What I wanted to share with you is this amazing vegan chocolate chip cookie recipe that I've found on Instagram ( and for this batch, I decided to give a little twist but you don't need to do it!).

It's a very easy recipe that you can all make for your friends, family and maybe if you ever need to raise some money.

For this recipe you'll need:


ingredients

  1. 100 g of coconut oil
  2. 100 g of brown sugar
  3. 50 g of white sugar
  4. 50g of applesauce
  5. 75 ml of any vegetable milk ( I usually use soy)
  6. 1 tsp of vanilla extract
  7. 250 g of plain flour 
  8. 1 tsp baking soda
  9. 100g chocolate chips ( + some chocolate bar chunks *)



INSTRUCTIONS

In a large mixing bowl, start by mixing the coconut oil with the sugars until well blended. 
Then add the milk, the applesauce and the vanilla and mix. Sift the flour and the baking soda and mix everything with a wooden spoon. 
Then the best part begins! ADDING the CHOCOLATE!! Start by folding the chocolate chunks and chips onto the mixture until you feel like that everything is well combined and the chocolate is well distributed between the batter.

Involve the bowl in saran wrap and chill the doe for 30 minutes to 1 hour.

Before taking the bowl out of the fridge, pre-heat your oven to 180ÂŞC. Then line a baking tray with some baking paper and with the help of an ice cream scooper, scoop balls and line them with some distance between them because the cookies will most likely spread out.
Bake the cookies for 10-20 minutes! Take them out of the oven and let them cool down in a cooling rack. 

One amazing thing about this recipe is that you can freeze - YES, FREEZE!! - the balls so that you can have them later! This recipe makes a lot of cookie balls so I like to bake half the same day and freeze the other half for another day!

NOTES!
*Mixing chocolate: This step is 100% OPTIONAL! But I honestly think that a mixture of chocolate chips and chocolate chunks works really well because of the chunks! they melt in the oven and when you eat the cookies the chocolate melts in your hands and is just amazing.

* Photos: The cookies that you see in the photos are from my recent batch where I added a little bit of vegan cocoa powder because I as I was folding the chocolate chips and chunks I felt like my batter was a little bit liquid than usual but you don't need to use! I've used this recipe a few times before but this time something wasn't right. Nonetheless, the cookies tasted amazing!
