Hi!
One recipe that I always love to bake is Banana bread. Most of the recipes I follow are super easy and quick and super delicious.
A few days I came across a low calorie one - that claims that each slice is around 75 calories each - so I decided to try and give my personal twist to the original recipe.
The original recipe - that you can read here - isn't vegan but it has, already in the ingredient list, replacements for the egg, so it makes it very easy to do a vegan version.

INGREDIENTS
- 2 bananas
- 1 flax egg
- 1 tbsp unsweetened applesause
- 1/2 cup 0 calorie stevia
- 1 tsp vanilla extract
- 2 tbsp vegetable milk
- 1 tsp baking powder
- 3/4 cup all-purpose flour
- 1/8 tsp of salt
- 1 tbsp of vegan chocolate chips ( optional)
INSTRUCTIONS
- Start by preheating your oven to 180ºC and prepare your baking tin with parchment paper.
- To a large mixing bowl, add the bananas, the flax egg, the applesauce, the vanilla, the milk, the stevia and mix everything together until all well incorporated.
- Add the flour, baking powder and salt to the bowl and mix until well incorporated.
- Pour the mixture into the baking tin. Add some vegan chocolate chips and spread them evenly.
- Bake the banana bread for 20 minutes or until toothpick comes out clean.
- Let the bread cool down before cutting.
